“Live” Scottish Bamboo Clam

Razor clams, also called “Bamboo clams” due to their long, straight shape reminiscent of straight razors, are distinct from typical round clams. These elongated mollusks are harvested from the ocean floor near Scotland’s coast and offer a unique dining experience. The meat of these clams has a delicate, sweet flavor with a hint of brine, and its texture ranges from soft to chewy depending on the part being eaten. Recognizing the potential of this flavorful and nutritious seafood, Chef Yang and his team have created four new dishes that highlight the bamboo clam’s distinctive qualities.
